Sometimes one doesn't feel too up for cooking, and it's enough to just gather a few things you might find arou
nd in the kitchen in order to end up with a fullfilling yet yummy dish... Lately I've gotten used to have some cooked brown rice in the fridge, it's nutritious and very versatile (breakfast, lunch, dinner, dessert, whatever) and matches with endless amounts of food. So, along with some raw vegetables, I ended up with this very colorful as well as vitamin-packed dish (in fact, the more colorful, the wider the nutrients spectrum).
Plat combinat veg / Veggie assorted plate
1 tassa d'arròs integreal cuit / cup cooked brown rice
1 ceba morada petita / small purple onion
1 pastanaga / carrot
1/3 cogombre / cucumber
5 tomàtigues cherry / cherry tomatoes
1/2 alvocat / avocado
Oli d'oliva verge extra / Virgin olive oil
Condiment al gust (jo vaig emprar Ametlla+ 2) / Seasoning to taste (I used Ametlla+ 2)
- Pelar la pastanaga i verdures que ho requereixin i tallar-les com més agradin, igual que la resta de verdures.
- Trempar tots els ingredients al gust.
- Peel the carrot and the other veggies that might need it and chop them as desired, and same with the rest of the vegetables.
- Dress to taste.
