Porridge de poma / Apple porridge

Bon dia! :-)

Escric des de la saleta de ca nostra, amb el sol matiner entrant pel finestral i inundant-me la cara. Somric de plaer. Per aquest benestar mantiner pentura me fa ganes compartir una recepta de desdejuni recent, concretament d'ahir. Em va fer sentir molt bé, és recomfortant, saborosa, me va satisfer internament i em donà energia per tot el dematí.

As I type I'm sitting in our living room, sun through the big window and flooding my face. I smile out of pleasure. Perhaps out of this morning well-being I feel like sharing a breakfast recipe, in fact yesterday's. It made me feel very good, it's comforting, tasty, gave me inner warmth and energy for the whole morning.

Porridge de poma / Apple porridge

INGREDIENTS


1 tassa de flocs de civada / cup rolled oats
1 poma / apple
Panses / raisins
Ametlles crues / Raw almonds
1 cullerada de sirop d'àgave / Tbsp agave syrup
Canyella / cinnamon
1 cullerada de mantega de cacauet / Tbsp peanut butter
Aigua / water


- Coure els flocs amb una mica d'aigua durant aproximadament 5 minuts.

- Trossejar la poma i batre amb la civada, el sirop i la mantega.

- Esmicolar les ametlles i afegir per damunt, juntament amb les panses i la canyella.

- Nyam nyam.

- Slightly cook the oats with some water for about 5 minutes.

- Chop the apple and process along with oats, syrup and peanut butter.

- Crush the almonds to top porridge, plus raisins and cinnamon.

- Om nom nom.

Truita de patata i verdura (vegana) / Spanish omelette with veggies (vegan)

Avui toca la truita de patata vegana, sorprenent per la versemblança que té amb la tradicional feta amb ous. I aquest pic amb algunes verdures per afegir-li vitamines, fibra i color :-)

Today it's about the vegan spanish omelette; surprising by how alike it looks to the traditional one (out of eggs). This time also along with some vegetables for a plus of vitamins, fiber and color :-)

Truita de patata i verdura (vegana) / Spanish omelette with veggies (vegan)

INGREDIENTS

3 patates mitjanes / medium sized potatoes
1 ceba / onion
1/2 pebre vermell / red bell pepper
1/2 pebre verd / green pepper
1/2 carabassí / zucchini
2 alls / garlic cloves
1/2 tassa farina de ciurons / cup chickpea flour
1 tassa beguda vegetal / cup veg drink
1 culleradeta cúrcuma / tsp turmeric
Oli / Olive oil
Sal / Salt
Pebre bo / Ground Pepper


- Sofregir la ceba tallada al llarg i les patates a làmines no massa fines amb els alls laminats.

- Afegir-hi la resta de verdures tallades a cubs i deixar sofregir 5 minuts més a foc mig.

- Dins un bol mesclar la farina de ciurons, la beguda vegetal i les espècies i mesclar fins aconseguir una textura semblant a l'ou batut. 

- Mesclar tots els ingredients i abocar a la paella calenta (amb cullerada d'oli prèviament abocada), aplanar la mescla i deixar coure a foc fluix durant 10-15 minuts.

- Comprovar que ha quedat daurada i coure per l'altre costat.

(Convé que cogui a una temperatura inferior a la d'una truita tradicional, ja que la mescla de farina de ciurons es torba més a cuallar, i sinó quedaria massa desfeta i crua per dedins).

- Sautee onion cut lenghtwise and potatoes cut in not so thin slices, along with the sliced garlic cloves.

- Add the vegetables chopped into small cubes and let cook for 5 minutes at low heat.

- In a bowl, mix chickpea flour, veg drink and spices and blend until texture similar to beaten egg.

- Mix all ingredients and pour into hot pan (previously added a Tbsp oil), flatten the mixture and let cook at low heat for 10-15 mintues.

- Check it's golden, flip and let it low heat for another 10-15 minutes.

(Temperature must be lower than when cooking a traditional tortilla, since the chickpea flour mixture requires longer to set, and otherwise it'd get too runny and undercooked).

Plat combinat veg / Veggie assorted plate

A vegades no hi ha massa ganes de cuinar, i basta arreplegar quatre coses que trobem a la cuina per acabar amb un àpat consistent i bo bo... Darrerament m'he avesat a tenir arròs cuit a la gelera, és nutritiu, versàtil (berenar, dinar, sopar, postre, etc) i adiu amb infinitat d'altres aliments. Així que, juntament amb algunes verdures crues queda aquest plat tan colorit com carregat de vitamines (de fet, quants més colors, més ampli el ventall de nutrients).

Sometimes one doesn't feel too up for cooking, and it's enough to just gather a few things you might find arou

nd in the kitchen in order to end up with a fullfilling yet yummy dish... Lately I've gotten used to have some cooked brown rice in the fridge, it's nutritious and very versatile (breakfast, lunch, dinner, dessert, whatever) and matches with endless amounts of food. So, along with some raw vegetables, I ended up with this very colorful as well as vitamin-packed dish (in fact, the more colorful, the wider the nutrients spectrum).

INGREDIENTS 

1 tassa d'arròs integreal cuit / cup cooked brown rice
1 ceba morada petita / small purple onion
1 pastanaga / carrot
1/3 cogombre / cucumber
5 tomàtigues cherry / cherry tomatoes
1/2 alvocat / avocado
Oli d'oliva verge extra / Virgin olive oil
Condiment al gust (jo vaig emprar Ametlla+ 2) / Seasoning to taste (I used Ametlla+ 2)


- Pelar la pastanaga i verdures que ho requereixin i tallar-les com més agradin, igual que la resta de verdures.

- Trempar tots els ingredients al gust.

- Dress to taste.

Crema d'alvocat i cacau / Avocado & cocoa crème

Deliciós i nutritiu berenar el d'avui dematí! A part de l'indispensable meló a primera hora, he investigat a veure què podia sortir de mesclar un batut verd amb una crema de cacau, i vet aquí quin resultat! He tengut testimonis i tot :-)

Delicious and nutritious breakfast this morning! Besides the essential melon slices first thing in the morning, I later tried out what could come out from mixing a green smoothie and a cocoa cream, and here's the great result! I even had a witness :-)

Delicious way of eating leafy greens!

Crema d'alvocat i cacau / Avocado & cocoa crème


INGREDIENTS

1/2 alvocat / avocado
1 plàtan madur / ripe banana
1 cullerada de cacau pur en pols / Tbsp raw cocoa powder
1/2 cullerada sirop d'àgave / Agave syrup
2 fulles grans de bledes / big swiss chard leaves
1/4 tassó de beguda d'arròs / glass rice drink


- Batre tots els ingredients plegats fins aconseguir una crema untuosa i fina.

- Acompanyar amb cereals inflats, galleta d'arròs o blat de moro, llavors o pipes, o el que l'imaginació aporti. Jo ho he menjat amb galleta d'arròs i un grapat de pipes de carabassa (afegides després de la foto), i per la pròxima hi afegiré sèsam triturat, que no en tenia avui.

- Blend all ingredients together until it becomes a creamy and smooth mixture.

- Eat it with some puffed grains, rice or corn cake, seeds or nuts, or whatever imagination brings. I had it with rice cakes and a few pumpkin seeds (added after pictures were taken), and next time it'll be ground sesame seeds, which I was out of today.

Rodona de ciurons garam masasala / Garam masala chickpeas round

Hola! :-)

Ha passat un temps, molta feina i classes pel mig. Avui dia lliure, encara em queden moltes feines pendents, però volia trobar una estona per això. Sempre acab estant més estona de la prevista a l'hora d'actualitzar, però em qued amb la satisfacció de la feina ben feta. Si es fan les coses, es fan bé.

Long time no see, lots of work and school. Today day off, still a lot to do, but I wanted to keep some time for this. Updating always takes much longer than I expect it to, but I stick to how rewarding it is in the end after some well done work. If you do something, you better do it well.



Aquí una recepta d'aprofitament que em meravella per la seva senzillesa i espectaculars resultats, ho té tot! Darrerament m'he aficionat a convertir tot el que no sé com cuinar en una espècie de truita o frittata, que li diuen en italià, i aquest cas no ha estat una excepció. Em quedava menys de mig pot de ciurons, unes bledes que requerien urgentment ser menjades i unes cebetes morades precioses. Alquimia, pim pam pum, i enlloc de bocadillo de atún, frittata de ciurons! I amb toc de garam masala :D

Here follows a recipe out of leftovers, which astounds me by how simple it is and how amazing the results are, it has everything! Lately I've gotten used to converting into some kind of omelette or frittata (as italians call it) all I don't know how to cook, and this wasn't an exception. I had less than half a jar of chickpeas, some swiss chard leaves that required to be eaten asap and a few small beautiful purple onions. Alchemy, and there you go, chickpeas frittata! Garam masala flavoured :D

Rodona de ciurons garam masasala / Garam masala chickpeas round

INGREDIENTS

1/2 pot de ciurons / Jar chickpeas
Un manat de bledes / A bunch of swiss chard leaves (or kale)
2 cebes morades / Purple onions
2 alls / Garlic cloves
1 cullerada de garam masala / Tbsp garam masala
2 culleradetes de comí en pols / Tsp ground cumin
Sal / Salt
Farina d'arròs / Rice flour
Oli / Olive oil
Aigua / Water


- En una paella o greixonera, sofregir la ceba tallada al llarg, quan comenci a ser tendra, afegir-hi els alls laminats, a foc mig.

- Al cap de dos minuts, també les bledes tallades fines, i sofregir lleugerament fins que les fulles perdin volum.

- Amb una forqueta, esclafar els ciurons (no és necessari que quedi un purè, en poden quedar de sencers o a la meitat).

- Mesclar bé els ciurons amb les verdures i les espècies (al gust).

- Dins la paella amb una mica d'oli, abocar, aplanar i deixar coure a foc fluix fins que quedi una crosta daurada. Llavors girar i deixar que es faci l'altra part.

- Voilà!

- In a pan, sautee the onions cut lenghtwise, and once they're tender, add the sliced garlic cloves and leave it cook at medium heat.

- After two minutes, add the leafy greens (finely chopped), and slightly cook until their volume has decreased.

- Mash the chickpeas with a fork (no need to puree them, some can be left as whole).

- Mix the chickpeas with the vegetables and the spices (to taste).

- In a pan with a bit of oil, add the mix, flatten and let cook at low heat until golden. Flip and same with the other side.

- Voilà!

Sushi ràpid / Fast sushi

Després d'haver tornat fer sushi amb les meves companyes de pis i recordar que no és tan complicat, vaig trobar apropiat aprofitar restes d'arròs cuit que tenia per fer uns makis ràpids. I aquí tenim el resultat! Encara que no resulti un sushi òptim (així com cal), és una manera senzilla i còmoda de matar dos ocells d'un tir: aprofitar restes i menjar un plat que m'encanta! :D

After making sushi again with my flatmates and remembering it's not such a hard work, I found appropriate to make the most of some cooked rice leftovers and use it to make some easy/fast makis. And here's the result! Even though it doesn't come up as optimal (how it's meant to be) sushi, it's an easy and handy way of killing two birds with one stone (I don't like this saying, by the way): use leftovers and eat a dish that I love! :D

Sushi ràpid / Fast sushi


INGREDIENTS

Arròs integral cuit / Cooked brown rice
Mig cogombre / Half cucumber
Fulles de nori / Nori sheets
Vinagre d'arròs / Rice vinegar
Una culleradeta de sucre / Teaspoon of sugar
Sal / Salt


- Dins una cacerola, encalentir unes cullerades de vinagre d'arròs i diluir-hi el sucre i un pessic de sal (les quantitats en funció de l'arròs que tenguem). Mesclar cuidadosament amb l'arròs de manera uniforme.

- Sobre l'estoreta de bambú, estendre una fulla de nori amb les retxes en "vertical" i humitejar-la amb una mica d'aigua. 

- Escampar l'arròs sobre els dos terços més propers a nosaltres, i presionar deixant-lo compacte. Al centre col·locar-hi el cogombre tallat a bastons de manera horitzontal, al llarg.

- Començar a tancar amb l'ajuda de l'estoreta, comprovant que quedi tot compacte, fins a arribar al tram final, que és només de nori i ens serveix per tancar el rotlle (si és necessari humitejar-lo una mica més perquè aferri bé, endavant). (En aquesta foto es poden veure les passes, canviant el peix per vegetals, naturalment!).

- Tallar els makis amb un ganivet de fulla fina molt cuidadosament en la amplada que desitgem. Ja es poden servir amb els condiments que agradin: tamari, wasabi, gingebre, etc.


Altres idees són fer-les amb el que tenguem a mà: pastanaga, alvocat, tofu, tempeh, fruites (plàtan, mango), etc.

- Slightly heat the rice vinegar in a pot and add the sugar and a pinch of salt until it's completely melted (amounts depending on how much rice there is). Mix gently and evenly with the rice.

- On a bambu mat, spread one nori sheet with its stripes going "vertical" and slightly dampen with a little bit of water.

- Spread the rice over the two thirds of the nori closest to us, and press leaving it compact. On the center, place the cucumber chopped into thick slices horizontally, along with the rice.

- Start rolling up with the help of the mat, making sure it all stays compact, until the end, where there is only nori left. Use it to close the roll (if more water is needed in order to seal it, go ahead). (In this picture the steps can be seen, changing the fish for veggies, of course!).

- Cut the makis very carefully with a thin blade knife into desired width. They are ready to serve with the condiments we choose: tamari, wasabi, ginger, etc.


Other ideas for the filling that we might have in hand: carrot, avocado, tofu, tempeh, fruit (banana, mango), etc.

Paella de quinoa / Quinoa paella

Bon dia!

El darrer pic que vaig anar al mercat de segona mà (permí fa dues setmanes) va ser un dia de sort, i vaig firar un grapat de cosetes interessants. Entre elles hi havia una mini paella (per 1 ó 2 racions) que em va costar 1€, no ho vaig dubtar! I per estrenar-me (mai havia fet una paella, encara que he vist a mu mare incontables vegades repetir el procediment) vaig decidir fer-la de quinoa, la qual he tastat algunes vegades i m'ha encantat. I en vaig sortit contenta, amb resultats satisfactoris, així que segur que caurà de tant en tant (ara tocar fer-la d'arròs).

Good morning!

Last time I went to the flea market (I reckon it was two weeks ago) I had a lucky day, as I ended up with a bunch of bargains. One of them was a small paella pan (for 1 or 2 servings), which cost 1€, I had no doubts about it! So to start off with it (I had never made a paella before, although I've seen my mother repeat the procedure countless times) I decided to cook it with quinoa (instead of rice), which I've tasted a few times and loved it. I was glad about it, as it came out with successful results, so I'm making it from time to time (next time with rice).

Paella de quinoa / Quinoa paella

INGREDIENTS

1 ceba / onion
1 tomàtiga madura / ripe tomato
1 pebre verd / green pepper
1 pebre vermell /  red bell pepper
1/2 carabassó / zucchini
Mitja dotzena de mongetes / half a dozen string beans
2 alls / garlic cloves
1 tassa de quinoa / cup quinoa
1 sobret de safrà / small saffron package (less than a teaspoon)
1 tasses d'aigua o brou de verdures / cups water or veggie stock
Oli / olive oil
Sal / salt



- Pelar i tallar la ceba petita, picar els alls i la tomàtiga. Amb un raig d'oli, començar a sofregir dins la paella.

- Fer net i tallar els pebres, carabassó i mongetes en trossets menuts, i afegir a la paella un pic el sofregit estigui ben tendre.

- Deixar coure les verdures 10 minuts remenant a foc mig, i llavors afegir la quinoa. Remoure perquè es mescli uniformement amb les verdures i deixar daurar 2 minuts.

- Abocar dos tassons d'aigua (o brou), el safrà i la sal, remenar i tapar. Deixar coure a foc baix i anar comprovant que la quinoa té suficient aigua per seguir bevent mentre es cou.

- Deixar tapat i covant per acabar de coure i servir.

- Peel and chop the onion small, mince garlic cloves and the tomato. Cook softly in olive oil.

- Wash and chop the peppers, zucchini and beans into small chunks, and add to the pan once the onion and company are tender.

- Let cook the vegetables for 10 minutes medium heat stirring often, and then add the quinoa. Mix it well with the vegetables and let golden for 2 minutes.

- Add two cups of water (or stock), saffron and salt, stir and cover. Let simmer and keep making sure quinoa has enough water to keep cooking.

- Leave covered and absorbing the taste and liquid for the last minutes. Serve.




Un clàssic: Hamburgueses de civada i soja texturitzada

És tot un repte això de plantar-se aquí al davant i: au, escriu. Sobretot perquè per començar encara no sé ben bé què vull dir, i de moment em fa respecte exposar fets personals aquí, encara que ningú ho llegeixi. Supòs que és qüestió de costum i d'anar agafant confiança (o no).

Per tant, nova recepta!

To me it's challenging to just sit here and think: go ahead, type. Basically because in the first place I don't know exactly what I want to say, and so far I sort of fear exposing personal issues in here, even if no one reads it. I guess it's a matter of habit and getting more confident (or not).

So then, new recipe!

Hamburgueses de civada i soja texturitzada

Ahir em vaig animar a preparar una recepta tan senzilla i bàsica... que encara no l'havia fet! (Ja feia pardal...). Són unes hamburgueses (en realitat preferesc anomenar-les "raoles" o inventar-me el nom, però amb la aquesta paraula més internacional resulta més fàcil fer-me entenedora) de flocs de civada i soja texturitzada. Naturalment he afegit alguns detalls que les han particularitzat una mica. Definitivament serà una recepta recurrent, és extremadament ràpida i pràctica de preparar!

Yesterday I decided to finally realize this very simple and basic recipe... which I hadn't done yet! They're oats and TVG burgers (I actually prefer to call them "pancakes" or make the name up, but by using this international word I get easilier (is this even a word?) understood). Of course, I added some personal details in order to make it more particular. I'm definitely cooking this often from now on, it's extremely fast and practical to prepare!



INGREDIENTS

Una tassa de flocs de civada / A cup of rolled oats
Una tassa de soja texturitzada fina / A cup of TVP (flakes)
Una grapada de cacauets torrats / A handful of roasted peanuts
Un parell de florets de bròquil / A few broccoli florets
Mig tassó de beguda d'arròs / Half a glass rice drink
Farina d'arròs / Rice flour
Sal / Salt
Pebre bo / Black pepper
Oli / Olive oil


Dins un bol, mesclar uniformement la civada amb la soja texturitzada, i afegir-hi la beguda d'arròs de manera que es vagin hidratant. Afegir-n'hi tanta com sigui necessària, de manera que quedin hidratats però no xops. En cas que això ocorregués, se li pot afegir una mica de farina d'arròs perquè absorbeixi l'excés d'humitat. 

Picar petit el bròquil i afegir-lo a la mescla, juntament amb les espècies. Pelar els cacauets i picar-los (però deixant alguns trossos més grans perquè es notin). Mesclar uniformement tota la mescla i salar al gust.

Deixar dins la gelera durant unes hores de manera que la mescla quedi compacta. A l'hora de preparar, encalentir un raig d'oli a la paella, i mentrestant anar formant bolles de pasta, aplanar-les i passar-ne les dues cares per la farina d'arròs. En ser calent l'oli, daurar les hamburgueses (/raoles) per les dues bandes, i servir!

A jo m'agrada cometre algun pecat de tant en tant, i menjar aquestes hamburgueses acompanyades de kètxup és un "guilty pleasure". ;)

In a bowl, mix evenly the oats and the TVP, and then add the rice milk in order to hydrate the dry ingredients. Add as much as needed, so they get hydrated but not soaked. If that happened, some rice flour could be added to absorb the extra liquid.

Chop the broccoli into small chunks and add to the mixture, along with the spices. Discard peanut shells and chop (leaving some bigger chunks, so they are noticeable). Mix everything well and salt to taste.

Let chill in the fridge for some hours so that the mixture becomes compact. Once ready, heat a spoon of oil in the pan, and meanwhile start forming balls out of the mixture, making them flatter and over rice flour on both sides. As soon as the oil is hot enough, panfry the hamburgers until golden on both sides, and serve!

I like sinning from time to time, and eating these burgers along with some ketchup is one guilty pleasure of mine. ;)

Benvinguda - Sopa de tomàtiga / Welcome - Tomato Soup

Una vegada més, davant una pàgina en blanc. És confós, provoca respecte i por, però també engresca.

Ant, 26 anys i mig, illenca, políglota, peixos, veg.

M'agradaria mantenir aquest espai com una eina de seguiment i bitàcora de les petites passes que vaig realitzant dins la cuina, seguint un paràmetre molt concret que és la gastronomia vegana.

Per encetar aquest nou espai, la meva proposta és una recepta d'estiu, senzilla i d'aprofitament. La idea va sorgir quan fa poc aquest estiu em vaig trobar amb excedents de tomàtigues i volia aprofitar-les d'una manera diferent. Després de consultar diversos llibres i webs cercant la recepta definitiva (tenia el gust de la sopa a les meves papil·les gustatives, tot i que no n'havia menjat mai), vaig optar per mirar de trobar la meva pròpia versió a base d'essaig i error (o encert). Aquí va la recepta!

To start off this new space, I'd like to present an easy summer recipe, which prevents wasting away spare goods. I came up with the idea not long ago this summer one day after finding out I had way too many tomatoes going ripe which needed to be used soon, but I wished for something different. After looking through several books and web sites searching for the ultimate recipe (I even had the taste of the soup in my taste buds, even tho I had never had such a soup!), I ended up deciding I'd figure out my own version out of trial and error (or success). Here goes the recipe!

















INGREDIENTS

Una grapada de tomàtigues madures / Handful of ripe tomatoes

Mitja ceba grossa o una sencera petita / Half a big onion o a whole small one

4 alls / garlic cloves

Mitja dotzena de pebres de tap de cortí / Half a dozen tiny bell peppers ("tap de cortí)

Oli / Olive oil

Sal / Salt

2 fulles de llorer / 2 Bay leaves





Dins una olla amb un raig d'oli, sofregir suaument la ceba tallada, els alls a làmines i el llorer fet trossos. Salar-ho per fer suar la ceba abans. Mentrestant, tallar els pebres i llevar-los totes les llavors, i afegir a l'olla.

Trossejar les tomàtigues (benvinguda la pell) i afegir-les al sofregit. Deixar-ho cuinant a foc mig uns minuts i finalment afegir-hi dos tassons d'aigua. Tapar i deixar coure a foc baix-mig durant 15-20 minuts.

Un cop ben cuit, retirar els trossos de llorer, salar al gust i passar per la batedora. Es poden deixar trossos sense batre o es pot acabar ben finament afegint-hi un raig d'oli d'oliva.
Servir calent amb julivert o alfabeguera fresca.

Preheat a stockpot over medium heat. Sauté the onions (cut into slices) in the oil for some minutes, then add the garlic cloves (sliced), the bay leaves into pieces and salt, so the onion will sweat. Meanwhile, remove seeds from peppers and add them diced into the stockpot. 
Chop the tomatoes (skin is wellcome) and add them to the cooking mixture, letting it cook medium heat for some minute and eventually add two glasses of water. Stir and cover low heat for 15-20 good minutes.
Once everything is well cooked, remove bay leaves, salt to tast and puree it. Some chunks can be left or either make it a thin soup adding a tablespoon of olive oil in the last seconds of pureeing.
Serve hot with fresh parsley or basil.
