Batut de pinya i coco 100% natural / 100% natural pineapple & coconut shake

Doncs això va ser el berenar d'ahir: pa de sègol amb mongetes esclafades i tomàtigues, i batut de coco i pinya 100% natural.

El pa va ser un obsequi que la meva companya de pis em dugué d'Alemanya, ja que sap que aquest tipus de pa (anomenat Pumpernickel) m'encanta. Al damunt hi han anat unes mongetes blanques esclafades que em restaven a la gelera i un parell de tomàtigues (no sé si són cherris...) al damunt.

Pel que fa al batut, per una banda duu pinya, la qual em va oferir una altra companya que havia comprat i tallat a rondanxes i vaig voler aprofitar-la per combinar-la amb el coco, ja que resulta una mescla deliciosa. La setmana passada vaig decidir comprar un coco per primera vegada (de fet, mai havia menjat coco al natural, només ratllat o en forma de llet). Va ser tota una odissea obrir-lo, però va valer la pena tot just vàrem poder prendre la deliciosa aigua que conté a l'interior. I la polpa la vaig menjant poc a poc com a postre. I pel batut!

So this was yesterday's brekafast: rye bread with mashed white beans and tomatoes, and 100% natural coconut and pineaple shake.

The bread was a present brought from Germany by my flatmate, who's aware that I enjoy this kind of bread very much (called Pumpernickel). On top of it there are some mashed white beans I had as leftover on the fridge and some tomatoes (that I'm not sure could be called cherries).

Regarding the shake, on the one hand it has pineapple, which comes from another flatmate who bought and sliced it, and I combined it with the coconut, as it becomes a delicious match. Last week I decided to buy a coconut for the very first time (in fact, I had never eaten coconut in it natural form, only as schredded coconut or milk). Opening it was an odyssey, but it totally paid off as soon as we tasted the delicious water inside. I've been munching the flesh as a dessert ever since. And also for the shake!

Batut de pinya i coco 100% natural / 100% natural pineapple & coconut shake

INGREDIENTS

Polpa d'1/4 de coco fresc / pulp of 1/4 a fresh coconut
1 talla de pinya (1 dit de gruixa) / pineapple slice (1 inch thick)
1 tassó de beguda vegetal (arròs en aquest cas) / glass of veg drink (rice in this case)
2 glaçons / ice cubes

- Tallar ben petita la polpa del coco i batre amb mig tassó de la beguda vegetal fins que les fibres quedin el màxim desfetes.

- Colar la mescla deixant per una banda la beguda amb gust de coco i per l'altra les fibres (sembla coco ratllat humit. De fet ho és).

- Afegir a la beguda la pinya tallada i la resta de la beguda vegetal i batre fins incorporar bé tots els ingredients.

- Servir fresquet amb els glaçons.

- Mince the coconut flesh and process with veg drink as tiny as the fibers can get.

- Strain leaving the coconut flavored drink on one side and the flesh fibers on the other side (it looks like wet shredded coconut. It actually is).

- Add the chopped pineapple to the former and blend until all the ingredients are well combined.

- Serve chilled with ice cubes.

Antburgueses / Antburgers (Tutorial)

No sóc massa aficionada a utilitzar el congelador (pel meu gust, quant més fresc el producte, millor); de fet fins fa algunes setmanes / mesos, no li havia donat més ús que el de mantenir el pa de sopes, algun congelat esporàdic (garrofó és l'únic que em ve al cap) i el gel. Però darrerament congelar fruita trossejada per fer gelats o afegir als berenars m'ha resultat molt pràctic. I ha coincidit amb què volia buidar rebost i quina millor idea que fer baixar les provisions d'arròs i llenties a base d'hamburgueses (a partir d'ara anomenades Antburgueses perquè les faig jo, Ant). I ja que hi som, queda per la posteritat un tutorial per aquell interessat en submergir-se en el món de les "hamburgueses" vegetals.

El procediment és molt senzill: 
a) coure les llenties i l'arròs
b) en ser ben cuits dividir la mescla en tantes parts com versions d'antburgueses es desitgin fer
c) afegir els diferents condiments a cada porció i fer les hamburgueses

Les que més m'han agradat han estat les de Garam Masala (m'al·lucina aquesta mescla d'espècies) i les de llevat de cervesa (el conjunt amb l'all, l'asafètida i el llevat li dóna un regust aformatjat impressionant).

I'm not too keen on using the freezer (to my taste, the fresher the product, the better); in fact it wasn't until some weeks/months ago that all I ever did was use it to keep the sliced bread, some random frozen item (lima beans are the only thing that comes to mind right now) and ice. But as I lately have been freezing chopped fruit to turn it into ice cream or pour it over breakfast, it has become quite practical. And it happened to meet the time in which I intended to empty my pantry, and what a better way to lower the supplies of rice and lentils than transforming them into burgers (from now on, called Antburgers as I am doing them myself, Ant). And since we're at it, this remains as a tutorial for those interested in diving into the world of veggie burgers.

The procedure is quite simple:
a) cook lentils and rice
b) once well cooked, divide into as many different types of burgers we want to make
c) add the complementary ingredients into each portion and make the burgers

The ones I enjoyed the most are the Garam Masala ones (this spice blend blows my mind) and the nutritional yeast ones (the mix with garlic, asafetida and nutritional yeast provides an amazing strong cheesy flavor).

Antburgueses / Antburgers (Tutorial)

INGREDIENTS

(per 26 antburgueses / serves 26 antburgers)

2 tasses d'arròs basmati integral / cups brown basmati rice
1 tassa de llenties "pardines" / cup brown lentils
1 tassa de llenties vermelles / cup red split lentils
Sal / salt
Pebre / black pepper
Farina d'arròs / rice flour


INGREDIENTS CONDIMENTS

· Antburgueses I
1 cullerada espècies Garam Masala / Tbsp Garam Masala spice blend
1/2 Pastanaga ratllada / schredded carrot


· Antburgueses II
6 olives negres / black olives
2 cullerades de flocs de civada / Tbsp rolled oats
Pebre bord / Paprika
 

· Antburgueses III
Pipes de carabassa / Pumpking seeds
All en pols / garlic powder
Llevat de cervesa / nutritional yeast
1 punteta d'asafètida / tiny pinch asafetida
 

· Antburgueses IV
Romaní / rosemary
1/2 pastanaga ratllada / schredded carrot
Sèsam / sesame
1/2 cullerada pasta de tomàtiga / Tbsp tomato paste


- Dins una olla prou gran posar a coure l'arròs i els dos tipus de llenties amb aigua suficient.

- En ser ben cuits, afegir sal i pebre, deixar refredar una mica, esclafar una mica amb una forqueta i dividir en 4 porcions diferents.

- Afegir a cada porció els ingredients desitjats al gust. Alerta amb les espècies! Més val començar poc a poc, que posar-n'hi massa des del principi i que resulti incomestible. Sobretot amb el Garam Masala i l'asafètida (d'aquesta darrera el màxim que es pot utilitzar és una punteta, ja que té un gust MOLT fort, i un tant fètid, tot sigui dit).

- Formar les hamburgueses, enfarinar-les i fer el que es cregui necessari amb elles: menjar-les (passant-les per la paella o el forn abans, clar), congelar-les, dur-ne la meitat al veïnat, etc. En el meu cas, com he explicat abans, he optat per congelar-les.

- In a large pot, bring to boil the rice and the two types of lentils with enough water.

- Once they're cooked enough, add salt and pepper, let cool for a while, mash with a fork and divide into 4 portions.

- Add ingredients to taste to each portion. Beware the spices! It's better to start off by adding just a little bit, rather than overdosing from start and making it inedible. Especially Garam Masala and asafetida (the latter should be used very carefully, at most just a pinch of it, as the flavor is VERY strong, and somehow fetid, I must add).

- Shape the burgers, coat them with rice flour and do whatever you should with them: eat them right away (after panfrying or cooking in the oven), freeze them, bring half of them to your neighbor, etc. In my case, as mentioned above, I went for the freezing.

Sopes mallorquines d'estiu / Summer majorcan vegetable stew

La cuina mallorquina compta amb molts de plats que de per sí són vegetarians, i molts d'altres on els productes animals són fàcilment substituïbles (o senzillament omissibles). I les sopes d'estiu (i les d'hivern també...) en són un dels meus exemples predilectes. Les sopes mallorquines més populars són les d'hivern, fetes a partir dels vegetals corresponents a aquesta època: espinacs, bledes, colflori, col, etc, els quals es couen fins quedar tendres i es serveixen sobre el pa moreno llescat ben fi a capes dins una greixonera. Les d'estiu (també anomenades "solleriques", almenys a casa nostra), per la seva banda, aprofiten les mateixes verdures amb que es fa, per exemple, el trempó. És un plat molt senzill de preparar, els més complicat és trobar el pa llescat si ens trobam fora de Mallorca.

Ingredients presents a la gelera: tomàtigues ben madures, pebres verds (tipus blanc mallorquí), cebes blanques al rebost... ja he menjat prou trempó aquests dies passats, ara toca donar-los un altre ús a aquestes verdures tan de temporada (i que tan bé combinen entre elles!). Així doncs, he decidit fer unes sopes mallorquines d'estiu.

It's very easy to find vegetarian dishes among the cuisine of Mallorca, and often animal products are easily replaceable (or even just dispensable). And today's summer stew (and also winter's...) are one of my favorite examples. The most popular "sopes mallorquines" are the winter one, prepared out of season vegetables: spinach, swiss chard, cawliflower, cabbage, etc, which are simmered until tender and then served over thinly sliced brown bread layered in a clay pot. The summer ones (also called "solleriques"
at our home, "from Sóller", a wonderful town in a valley) use up the same vegetables as trempó (typical summer salad of tomato, onion and green pepper). It's a very easy dish, the hardest part could be getting a hold of the sliced bread when one's out of Mallorca.

Food found in the fridge: ripe tomatoes, green peppers (white majorcan sort), onions in the pantry... I've already had enough trempó these past days, now it's time to give these seasonal veggies another purpose (and they match so well with eachother!). So here I decided to make some summer "sopes mallorquines".

Sopes mallorquines d'estiu / Summer majorcan vegetable stew

INGREDIENTS

1 ceba / onion
2 pebre verd (tipus blanc) / green pepper ("white" type)
3 tomàtigues / tomatoes
Alls / garlic cloves
Oli d'oliva / olive oil
Pebre bord / paprika
Sal / salt
Aigua / water
Pa de sopes / thinly sliced brown bread

- Tallar la ceba al llarg i els alls a làmines. Dins una greixonera (si no en tenim, una olla va bé) començar a daurar-los amb un bon raig d'oli.

- Tallar les tomàtigues a trossos mitjancers, i el mateix amb els pebres (m'han contat que és millor tallar-los amb les mans que amb el ganivet...).

- Quan la ceba es comenci a daurar, afegir-hi la tomàtiga trossejada i deixar-la sofregir uns minuts mentre comença a amollar aigua.

- Afegir-hi els pebres tallats, mig tassó d'aigua i deixar coure tapat tot plegat durant 15 minuts.

- Tastar de sal i afegir-hi pebre bord al gust. Deixar coure fins que la ceba i el pebre siguin ben tendres.

- Dins una greixonera (o recipient, per exemple, de vidre) cobrir el fins amb el pa llescat. Abocar-hi les verdures i el brou suficient perquè l'absorbeixi el pa i no quedin les sopes brouoses.

- Slice the onion lenghtwise and so the garlic cloves. In a clay pot (or a regular pot), sauté them with two tablespoons of olive oil.

- Chop the tomatoes into medium size chunks, and the same with the peppers (I've been told it's better to do so by hand rather than using a knife...).

- Once the onion begins to golden, add the chopped tomatoes and fry lightly for some minutes as it releases some water.

- Add the chopped peppers and half a glass of water and let simmer covered for about 15 minutes.

- Salt and sprinkle paprika to taste. Let cook at low-medium heat until the onion and pepper are tender.

- Layer some bread slices at the bottom of a glas or clay container until the bottom is covered. Pour the vegetables and enough liquid so that the bread absorbs the broth and gets soaked but the whole stew remains dry.

Berenar cru de fajol i fruita / Raw buckwheat and berries breakfast

Rebent inspiracions de fonts diverses, he descobert una combinació que construeix un berenar que M'ENCANTA. Admet infinites variacions en funció del que es tengui a mà, el que faci ganes o les ganes de complicar-se la vida. Es tracta d'una superposició de capes diverses (en anglès conegut com amb el gal·licisme parfait), en aquest cas pràcticament tot cru. El d'avui per exemple inclou per una banda inclou un "púding" de chia, una capa de fajol activat (també cru), ametlles picades i fruites fresques. La meitat de la preparació està ja llesta del dia anterior (ja que simplement consisteix en deixar-ho en remull), i l'altra meitat no podria ser més senzilla.

M'encanta la combinació de sabors i textures, és refrescant però em deixa satisfeta, a part que resulta molt vistós! Punts a favor, és una bomba de nutrients: àcids grassos saludables (Omega 3 de la chia i el lli), fibra (chia, lli, fajol, fruita), minerals i vitamines (fruites i ametlles), calci (chia, ametlles), antioxidants (fruites vermelles, chia), proteïnes (fajol, ametlles), fòsfor, potassi, ferro...

També m'està ajudant a fer baixar el rebost de fajol (tenim un sac de 3 kg que necessitava començar a liquidar-se ara que arriba l'estiu), ja que ara mateix no em fan tantes ganes les preparacions cuinades. D'aquesta manera el puc consumir sense cuinar i d'una manera deliciosa! És cert que desde que ha arribat la calor gairebé només tenc ganes de crus, fruita i verdures fresques, així que els batuts, sucs i amanides són les estrelles.

After being fed with different sources, I came up with a combination that builds up a breakfast that I'M LOVING. It's very flexible when it comes to variations adapting to what we've got in hand, what we're up to or how much we'd like to mess up our lives! It's a parfait, almost all raw. For instance, today's features a chia pudding, a layer of activated buckwheat (raw as well), chopped almonds and fresh berries. Half of it is ready made from the previous day (soaking is required), and the other half couldn't be easier to prepare.

I adore the combination of flavors and textures, it's refreshing yet satisfying, and it's also really appealing! Bonus, it's a nutrient bomb: healthy fatty acids (omega 3 from chia and flaxseed), fiber (chia, flaxseed, buckwheat, berries), minerals and vitamins (berries and almonds), calcium (chia, almonds), antioxidants (berries, chia), protein (buckwheat, almonds), phosphorus, potassium, iron...

It's also contributing to the lowering of staples in my pantry (we've got a 3 kg bag of buckwheat that was calling to get finished now that summer's around the corner), as for the moment cooking hot isn't that appealing. Thus I can use up buckwheat without even cooking it, in a delicious manner! It's a fact that since high temperatures hit, I've basically only been up for raw food, fruit and fresh vegetables, so smoothies, shakes and salads are the stars.

Berenar cru de fajol i fruita / Raw buckwheat and berries breakfast

INGREDIENTS

* Capa 1
- Llavors de chia, de lli i un dàtil trossejat deixat en remull tota la nit amb aigua (dins la gelera)

* Capa 2
- Grans de fajol deixats en remull en aigua tota la nit, descartada l'aigua i mesclats els grans amb una cullerada de proteïna vegetal (vainilla) i un raig de beguda d'arròs.

* Capa 3
- Ametlles crues trossejades.

* Capa 4
- Fraules trossejades congelades, gerds congelats ("frambuesas"), nabius secs ("arándanos"), panses, fruits fresca trossejada, etc.

* Layer 1
- Chia seeds, flaxseed and a chopped date soaked in water overnight (into fridge).

* Layer 2
- Buckwheat soaked overnight, rinsed and mixed to combine with a tablespoon of veg vanilla flavored protein powder and some rice drink.

* Layer 3
- Chopped raw almonds.

* Layer 4
- Chopped frozen strawberries, frozen raspberries, dried blueberries, raisins, chopped fresh fruit, etc.

Amanides / Salads (part I)

Són les 3:45. No puc dormir. De fet fa tres nits que no aconseguesc dormir més de 5 hores. Em despert al voltant de les 4 de la matinada i no sóc capaç de conciliar un altre pic la son. Anit directament ni he estat capaç d'adormir-me.

Duc bastant de nervi interior darrerament (i molta il·lusió), però la fase d'insomni per nervis ja estava superada. Sembla que no. 

I, cansada de fer voltes dins el llit, he decidit fer una recopilació d'algunes amanides meves. N'hi algunes de l'any passat, però són tan vistoses que val la pena fer-les presents. No m'amag d'admetre que menj pels ulls, em genera una gran satisfacció que l'àpat que m'alimenta sigui agradable a la vista. I les amanides normalment són una bomba de colors.

It's 3:54. I cannot sleep. In fact I haven't been able to sleep more than 5 hours for the last three nights. I wake up at around 4 in the morning and there is no way I get to fall asleep again. Tonight I couldn't even fall asleep in the first place.

I'm going through a rather nervous time (and lots of excitement), but I figured the insomniac nights due to nerves were over. It appears not to be so.

And, tired of being in bed staring at the dark ceiling, I decided to collect a bunch of salads of mine. Some are from last year, but they look so stunning it's worth they show up here. I don't hide my confession: I eat through my eyes, it deeply pleases me that the meal I'm about to eat looks appealing. And salads are usually and color bomb.

INGREDIENTS

1 tassa de fraules madures / cup ripe strawberries
3 dàtils / dates


- Obrir els dàtils, llevar-los el pinyol, xapar-los en 4 trossos i posar en remull amb poca aigua durant mitja hora.

- Rentar i trossejar les fraules.

- A dins el recipient de la batedora, mesclar les fraules i els dàtils (sense l'aigua) i triturar fins obtenir una pasta fina.

- Es manté a la gelera durant uns dies. Per mesclar amb iogur, escampar sobre el pa o fer un pastís funciona perfectament.

- Open and pit dates, chop them in 4 bits each and let soak in a little bit of water for about half an hour.

- Wash and chop strawberries.

- Blend dates (drained) and strawberries together until smooth mixture.

- It keeps well in the fridge for some days. It works amazing as dollop in yoghurt, as spread over bread or as topping/filling for a cake.

Ensalada de cogombre / Cucumber salad

Avui per dinar m'ha vengut ideal el que tenia dins la gelera per provar aquesta recepta: Tzatziki, d'aquest blog tan inspirador. Ha estat el companatge d'una altra recepta que, precisament, també és treta dels mateixos autors (pizza amb base sense gluten de colflori i farina de ciurons, però mereix una entrada a part). Rapidíssim de fer, refrescant (encara que el dia d'avui és més aviat gris i fresc) i el contrast de sabors m'encanta.

Today for lunch it was fab to use up some of what I had left in the fridge for this recipe: Tzatziki, from this very inspiring blog. It worked as side dish for another recipe that just happens to belong to the same authors (gluten free cawliflower chickpea flour pizza, but this deserves its own update). Super easy to make, refreshing (even tho today is more of a grey and chilly day) and I love the contrast of flavors.
