Ha
estat gairebé automàtic i simultani el procés d'entrada de la primavera
amb l'afany de menjar ensalades. Pràcticament a diari consumesc
aliments crus de diferents maneres que habitualment es consumeixen en
forma d'ensalada, ja que aquest format m'avorreix una mica. Però ha
estat començar a fer millor temps i més sensació primaveral i començar a
gaudir d'aquest tipus de preparació. Una de les més exultants ha estat
aquesta de mongetes vermelles, les quals m'agraden tant que les podria
menjar directament "a palo seco".
Per
altra banda, el cap de setmana passat després d'una improvitzada però
gratificant excursió, vàrem passar per la Fira del Fang (fira anual
d'artesania amb fang que es realitza al municipi de Marratxí, on és
tradicional aquesta activitat). Feia anys que no hi anava (me
n'assabentava quan ja havia acabat...), i record que de petita hi solíem
anar amb l'escola... i el que me'n duia a casa arribava sempre romput
després del trajecte de tornada jajaja. Aquesta vegada, però, les
adquisicions han arribat senceres! Vaig comprar un siurellet
per la gelera per donar a conèixer aquestes figures a les meves
companyes internacionals, i un plat preciós que M'ENCANTA i que
converteix allò que hi menj en molt més deliciós i agradable. En la
simplicitat de les coses resideix l'alegria quotidiana.

The
start of spring and the appetite for salads have occurred in an almost
automatic and simultaneous process. Most days I eat in different ways raw
food that's typically prepared as a salad, as I find it somehow boring
sometimes. But as soon as the weather started to get better and the
feeling of spring increased, I've begun to enjoy this kind of meal. One
of the most elated ones has been this one, with red beans, which I like
so much I could eat them out plain with a spoon.
On
the other hand, last weekend we went on an improvized yet satisfying
excursion, and after it we popped by the Fira del Fang (nd annual fair
of clay handcraft held in the town of Marratxí (Mallorca), where this
activity is traditional). It's been years since I last went (I used to
get notice of it when it was already over), and I remember that as a
child we'd go visit it with school... and whatever I brought home from
there always ended up crushed after the comeback journey hahaha. This
time, however, all purchases have arrived safe and sound! I acquired a
small siurell
for our fridge so my international flatmates would learn about it, and a
gorgeous plate that I LOVE and turns whatever I eat on it much more
delicious and nice. In simplicity lies everyday's joy.

Ensalda de mongetes vermelles de primavera / Sping red bean salad
INGREDIENTS
Mongetes vermelles cuites / cooked red beans
Enciam (trocadero) / lettuce (trocadero)
1 pastanaga / carrot
Ruca / arugula
Olives negres / black olives
Ceba tendra / spring onion
Cilantre / cilantro
Anous / walnuts
Oli verge / virgin olive oil
Sal / salt
- Cobrir la base del plat amb les fulles d'enciam netes.
- Pelar la pastanaga i tallar-la. Picar les olives i la ceba tendra.
- Arranjar tots els ingredients sobre la lletuga com més ens agradi i trempar amb sal i oli.
- Gaudir a poder ser a l'exterior mentre se senten els ocellets.

- Peel and chop the carrot. Chop olives and spring onion.
- Arrange all ingredients over the lettuce as desired and season with olive and salt.
- Enjoy preferably outside while hearing the birds sing.

Sopa de carabassa coenta / Spicy pumpkin soup
Avui recepta exprés, senzilla fins la màxima expressió i ideal pels darrers dies de fret que queden... benvinguda primavera!!! La meva època de l'any preferida, i ara mateix l'estic gaudint tot el que puc; en menys d'una setmana tres excursions, i demà partesc uns dies de retir al mig del camp a desconnectar i a connectar-me amb jo mateixa. Silenci, natura, introspecció i ioga, oh sí!

Today express recipe, as simple as possible and perfect for the last cold days of winter... welcome spring!!! My favorite time of the year, and right now I'm enjoying it as much as I can; in less than a week I've made three excursions, and tomorrow I'm leaving to spend some days in the middle of the country, to disconnect and connect with myself. INGREDIENTS
1 carabassa petita / small pumpkin
1 ceba / onion
Sal / salt
Oli d'oliva / olive oil
Pebre bo / black pepper
OPCIONAL / OPTIONAL
Cilantre o julivert picat / chopped cilantro or parsley
Grapat de cacauets / Handful of peanuts
- Pelar i trossejar la carabassa i la ceba.
- A dins l'olla amb aigua i una mica de sal, deixant coure 20 minuts.
- Afegir el pebre bo al gust i triturar fi amb la batedora, afegint-li un raig d'oli durant els darrers segons fins que quedi emulsionat.
- Servir amb condiments opcionals, en aquest cas ha estat cilantre picat un grapadet de cacauets com a proteïna.
- Bon profit!

- Throw into pot with some water and a pinch of salt and let cook for 20 minutes.
- Add black pepper to taste and blend until smooth, adding a spoonful of olive oil during the last seconds of blending, until emulsion.
- Serve with optional toppings, in this case I went for some chopped cilantro and some peanuts as protein.
- Enjoy!

Cràckers-pa pla d'ametlla / Almond crackers-flat bread (gluten free)
A la fi public una invenció de la qual em sent molt satisfeta i que repetesc regularment (no passen 2 setmanes sense que la recreï). Es tracta d'uns cràckers (per anomenar-los d'alguna manera), un pa pla d'ametlla i fulles que va sorgir com aprofitament de les sobres dels batuts verds que a vegades em faig per berenar els dematins. Ja que ens arriben tantes fulles amb la cistella de verdures ecològiques vaig trobar que emprar-les pels batuts verds era una opció molt interessant, ja que és una bomba de nutrients (vitamines, minerals, ferro, calci, etc) i fibra i alhora depurativa, desintoxicant i tonificant.
Algunes vegades, però, no em venia de gust el batut amb totes les fibres incloses, de manera que optava pel suc, és a dir, només el líquid (separat de la polpa). I què faig amb aquesta fibra preciosa carregada de nutrients? Aquí hi ha la reposta! Una mica de farina d'ametlla, algun condiment, lli per amalgamar i au! Vaig quedar sorpresa quan vaig tastar-ho per primer pic... gratament sorpresa! De fet gaudesc més de fer aquests cràckers que del batut/suc en sí :D Com a substitut del pa és meravellós, a més que té un gust molt agradable i és resistent. Es pot guardar un grapat de dies en un recipient hermètic, molt pràctic per dur arreu i picar en qualsevol moment. Jo estic encantada i entra directament al meu rànquing de creacions pròpies.
En el cas d'avui, els he menjat com de costum: amb diverses capes de verdures crues. A vegades, com aquest pic, amb una base fina de maionesa vegana, o amb pipes (girasol, carabassa, càrtam, etc), o amb patè vegetal, o com a acompanyament, o com a base de tapes, o amb els que se'ns passi pel cap bàsicament.

I finally display one of the own inventions I'm most proud of and that I repeat regularly (at least once every two weeks it's performed). It's some kind of so called cracker, some kind of very flat bread made of almonds and leafy greens that was born as a way of using the resting fiber of the green smoothies I take some morning. As we get so much leafy greens in our weekly organic veggies basket, I came up witht the idea of taking them as smoothies, which is an interesting concept as it's a bomb of nutrients (vitamins, minerals, iron, calcium, etc), fiber and it's also cleansing, detoxing and invigorating.
Sometimes, however, I'm not up for a full fiber smoothie, so I go for only the liquid, discarding the pulp. What do I do with all the nutrient packed precious fiber? Here's the answer! A little bit of almond meal here, some spices there, some flaxseed to integrate everything and voilà! It was a surprise when I tasted it for the first time... gratefully surprised! In fact I almost enjoy even more these crackers than the smoothies as such :D As some kind of bread substitute works wonderfully, very practical to bring around and have a snack at any given moment. I'm a happy bunny with it and it directly scored on my top ranking of own creations.
As for today, I had it as usual: with several layers of raw veggies. Sometimes, like today, with a thin base of vegan mayo, or with seeds (sunflower, pumpkin, hemp, etc), or with vegan spread, or as a side food, or as a base for tapas, or whatever comes to mind, bascially.

INGREDIENTS
Restes de les fibres del suc vegetal (bledes, rúcula, escarola, enciam, bròquil, espinacs, etc) / fiber rest left from green smoothie (swiss chard, kale, arugula, endive, lettuce, broccoli, spinach, etc)
Farina d'ametlla / almond meal
Llevat de cervessa / nutritional yeast
Lli mòlt / flaxseed
Sal / salt
Pebre bo / black pepper
- Encalentir el forn a 170ºC.
- Si només tenim el lli en llavor sencera, capolar-lo fins deixar-lo fi.
- Mesclar tots els ingredients (no fa falta aigua, la que mantenen els vegetales és suficient) fins que quedi una massa homogènia i consistent.
- Cobrir una llauna de forn amb paper i una fina capa d'oli d'oliva.
- Escampar amb les mans la mescla per la llauna i amb una cullera deixar la superfície llisa.
- Enfornar fins que les voreres es daurin, retallar-les amb un tallador de pizza i deixar coure la resta uns minuts més (no és necessari que quedi daurat, suporta bé igual).

- Preheat oven at 170ºC.
- If the only flax available is whole seed, grind.
- Mix all ingredients to combine (no water required, the remaing from the veggies is enough) until homogeneous and consistent batter.
- Cover oven continent with parchement paper and a thin layer of olive oil.
- Spread with hands the batter all over and leave the surface smooth and even with he help of a spoon.
- Leave in the oven until edges golden, cut them out with a pizza slicer and let the rest in the oven for some more minutes (doesn't need to get golden, it holds up well anyways).

Compota de pera / Pear compote
La recepta de la compota de pera és obra de Miss Kolendra, la qual em va enamorar definitivament el moment en que em donà a tastar aquesta preparació. Em varen sortir els ulls de les òrbites i vaig perdre la paraula durant una estona: només era capaç de proferir onomatoepies de plaer, d'haver-me sentit més d'un hauria pensat que m'estaven alimentant d'una altra manera ben diferent.
Pentura pec d'exagerada, però vull emfatitzar les intenses sensacions de plaer que m'aporta aquesta compota, sóc la primera en opinar que hiperbolitz, però no són bromes. I només amb tres ingredients. A jo m'agrada aprofitar a la fruiteria quan, al caixó de les verdures madures o tocades a 0,50€/kg trob un bon grapat de peres. A casa és una preparació recurrent, i tant ens és menjar-la encara calenta o ja freda. És deliciosa igual. O potser és l'excel·lent companyia que la fa tan bona? És igual, aquí va.

The recipe of pear compote deserves credits to Miss Kolendra, whom I fell in love with even more after she made me taste this. My eyes popped out of their orbits and I became speechless for a while: I was only able to utter onomatopeia of pleasure; someone might have thought I was being fed in a very different manner, if I had been heard.
May I am an exagerating sinner, all I want is to emphasize the powerful sensations of pleasure I get while eating this compote. I am the first one to believe I make an hyperbole out of this, but it's really no joke. And only three single ingredients. I like to get a hold of pears when I find a bunch at the fruit shop, where they set a corner with ripe or touched veggies and fruit sold at 0,50 €/kg. At home it's a recurring recipe, either still hot or already cold we enjoy it anyways. It's still delicious. Or maybe it's the superb company that makes it so good? Doesn't matter, here it goes.
Compota de pera / Pear compote
INGREDIENTS
1 kg de peres madures / ripe pears
100 gr farina d'ametlla / almond meal
Peladura ratllada d'una llimona / 1 lemon grated zest
- Pelar i trossejar les peres, descartant el cor i les fibres centrals.
- Posar dins una olla a coure a foc fluix durant 30 minuts (com més madures les peres, menys temps necessitaran).
- En desfer-se les peres, apagar el foc, afegir-hi la farina d'ametlla i la peladura de llimona ratllada, mesclar bé i passar per la batedora fins que no quedin grums.
- Orgasmar.

- Put to cook in a pot at low heat for 30 minutes (the riper the pears, the less time they'll need to cook).
- Once the pears are easily smashed, add almond meal and lemon zest, mix well to combine and blend until smooth.
- Orgasm.

Ensalada de patata / Potato salad
Bon dia món!
És gairebé un miracle de la naturalesa ser capaç darrerament de treure temps en el meu dia a dia per dur a terme activitats que tenia pendents, ja siguin obligacions com plaers. Obligacions com posar les piles a tasques acadèmiques (entre d'altres un treball mastodòntic que duc més avançat del que m'ensumava), i plaers (em confés persona hedonista) com compartir més temps amb les meves persones o dedicar-li temps a aquest espai anomenat blog.
Tot això amb l'element afegit que hem tengut canvis importants a casa, ja que la meitat dels habitants de la nostra llar han canviat. Quedam l'equip format per Miss Kolendra (la batiarem amb un nom específic i il·lustratiu enlloc d'anar-la anomenant "la meva companya de pis" o "la catadora oficial de receptes") i jo, i la composició multicultural queda completada per un element alemany i un altre francès. Oh là là, on parle français à la maison! Sempre que puc escapar-me de l'anglès o el castellà aprofit per infiltrar-me en francès i així practicar, ja que gaudesc molt de parlar-lo i el vull millorar! L'alemany queda aparcat ja que no és necessari a casa (excepte per algunes paraules molt concretes) i ja el practic a la feina. I de moment el català queda limitat als meus pensaments o expressions verbals que em puguin sortir espontàniament.
Curiosament la recepta d'avui és d'inspiració alemanya. En la vida havia conegut quelcom com una ensalada de patata fins la llarga estada que vaig fer al centre d'Europa (concretament a Suïssa), el que més s'hi assemblava era l'ensaladilla russa. Però em va encantar l'invent! I la vaig veganitzar. Com companatge per un dinar d'estiu és ideal (per això la present en ple febrer :D) i es manté perfectament durant uns dies.

Good morning world!
It's almost a wonder of nature that lately I've been able to get some time during my days to dedicate to some activities I kept holding on, either duties or pleasures. Duties like working my ass off on academic tasks (among them, a mastodontic paper which is more forward than I figured), and pelasures (I confess I am an hedonistic person) like sharing more time with my beloved people or dedicate some time to this space called blog.
Besides this, there's the added element of major changes at home, as half of the inhabitants of our home have changed. The team featuring Miss Kolendra (let's give her a concrete and illustrative nickname instead of calling her "my flatmate" or "the official taster of my recipes") and me remains the same, and now the multicultural composition is completed with a german and a french element. Oh là là, on parle français à la maison! Each time I can avoid English or Spanish I sneak in speaking French, as I enjoy a lot speaking it and I'd like to improve it! German remains apart since it's not really necessary in the house (except for some specific words) and I already practice it at work. And for the moment, Catalan lingers only in my thoughts and the verbal expressions I spontaneously cannot avoid keeping in.
Funnily enough, today's recipe is German inspirated. I had never in my life known such a thing as a potato salad until my long stay in central Europe (Switzerland), what ressembled the most was Russian salad. But I loved the invention! So I veganized it. It works great as a side dish for a summer lunch (that's why I make it in February :D) and keeps great for some days.

Ensalada de patata / Potato Salad
INGREDIENTS
Patates / Potatoes
Cibulet / Chives
Olives negres / Black olives
Ceba tendra / Spring onion
INGREDIENTS SALSA / SAUCE
Maionesa vegana / Vegan Mayo
Mostassa / Mustard
Oli d'oliva verge / Olive oil
Sal / Salt
Pebre bo / Black pepper
INGREDIENTS OPCIONALS / OPTIONAL
Pipes de carabassa / Pumpkin seeds
Panses / Raisins
Tàperes / Capers
- Pelar i tallar les patates en trossos grossos i coure al vapor fins que siguin tendres (però no excessivament cuites ja que es rompen).
- Preparar la salsa mesclant tots els ingredients al gust.
- En ja no cremar les patates, tallar-les a trossos més petits segons la preferència.
- Mesclar les patates amb la salsa i deixar reposar una estona abans de menjar.
- Afegir els ingredients extra que es desitgin i gaudir!

- Peel and cut potatoes into big pieces and steam until tender (but not overcook as they break apart).
- Make sauce by mixing all ingredients to taste to combine.
- When potatoes have cooled enough to handle, chop into smaller chunks as desired.
- Mix potatoes and sauce and let set aside for a while before eating.
- Top with extra ingredients to taste and munch!

Espaguetis de quinoa amb verdures saltejades / Quinoa spaghetti with sauteed veggies
La meva Padrina és d'idees fixes, molt metòdica i a mesura que passen els anys sembla necessitar cada vegada més seguir estrictament els seus ritmes personals. Sinó es desbarata. Pel que fa a regals de Nadal, té dues opcions: si no hi ha pessetes, es marca un DIY (do it yourself) a base de regals fets per ella mateixa o a cadascú li cau una penyora o relíquia, i si es troba en una època de més abundància, fa una visita a la botiga de comerç just del barri i carrega amb un ítem per persona (val la pena comentar que arribam a ser més de 20 persones, facin els seus números). Aquest any ha estat de bonança i a jo m'ha correspost un paquet d'espaguetis de quinoa (de comerç just). Duia dins el rebost des d'ençà, ja que no menj pasta habitualment, i va servir per salvar-me un àpat per al qual tenia algunes verdures preparades per devorar. Res de l'altre món, uns espaguetis amb verdures saltejades, però saps què ho va ser de bo!
En aquest cas faig una excepció pel que fa al caràcter sense gluten que habitualment dedic.

My grandmother (Padrina) is a stubborn, methodical person, whose urge to follow her personal rythms seems to strengthen as time goes by. Otherwise she freaks out. When it comes to Christmas presents, she's got to options: if coins are running low, she goes for some DIY (do it yourself) which consists of gifts made by herself or each gets a heirloom, if she's going under a time of plenty, she visit the local fair trade store and gets an item for each of us (it's worth mentioning that we're over 20 people in the regular family gatherings, so go make your math). This year was packed with prosperity and my share was a package of quinoa spaghetti (fair trade). It remained in the pantry ever since, as I don't eat pasta very often, and it worked great to save a meal for which I had some vegetables ready to be devoured. No rocket science, spaghetti with sauteed veggies, but it was damn tasty!
In this case, this means an exception in regard to the usual gluten free nature of this blog.

Espaguetis de quinoa amb verdures saltejades / Quinoa spaghetti with sauteed veggies
INGREDIENTS
Espaguetis de quinoa
2 cebes tendres / spring onions
1/2 ramellet de bròquil / broccoli head
2 fulles de bleda / swiss chard leaves
1 grapat d'ametlles amb pell crues / handful of non peeled raw almonds
1 cullerada de tamari / Tbsp tamari
Oli d'oliva / olive oil
- Dins una paella al foc amb un raig d'oli, abocar les cebes tendres tallades, i en començar a ser tendres, afegir-hi els talls de les bledes i el bròquil tallat en trossos d'un dit polze de gros.
- Posar a bollir aigua en una olla, i quan aquesta arrenqui el bull, abocar-hi la pasta.
- Picar les fulles de bleda i afegir-les a la resta de verdures i seguir saltejant fins que comencin a pansir-se.
- Tallar les ametlles crues i reservar.
- Un pic la pasta estigui al dente, colar i afegir a les verdures, per tal de saltejar-la durant un minut.
- Servir amb les ametlles picades i un bon raig de tamari.

- In a hot pan with a tablespoon of oil, add chopped spring onions, and when they begin to get tender, add swiss chard stems and broccoli all chopped in 1-inch sized bits.
- Put water to boil in a large pot, and as it begins to boil, stir in pasta.
- Chop swiss chard leaves and add them to vegetables and keep sauteing until they start to wrinkle.
- Chop almonds and set aside.
- Once pasta gets al dente, strain and stir in with vegetables, and sauté all together for one more minute.
- Serve with chopped almonds and a tamari.

Batut de fraules a l'alba / Strawberry smoothie at dawn
Darrerament, degut a canvis d'horaris, he pogut gaudir el moment sagrat de l'alba durant diversos dies Tranquil·litat, colors del cel tan tènues com poderosos, la fresca contra els primers moments de la calor solar, els ocells donant la benvinguda al nou dia... i jo com a testimoni. Pura joia, que dura tan sols un instant.

Lately, due to changing schedules, I've been able to enjoy the holy moment of dawn for several days in a row. Quietness, soft yet powerful colors in the sky, chill against first moments of sun warmth, birds wellcoming the new day... and me as a witness. Pure bliss, that lasts only for an instant.
